Everyone picks what feels comfortable: telling you in their own words, or filling in field by field. These aren't two products: it's the same form, with the same fields and the same rules.

If someone starts on one side and continues on the other, they're never asked twice for the same thing.
The difference
A natural conversation doesn't mean half-finished data. The rules you set aren't suggestions for the assistant: they're a wall. However the conversation goes, invalid data never gets in.
If the field is «future dates only», there's no way to save last Tuesday.
Caught on the spot and asked again, without waiting until the end.
Checked against the right country, with its dialling code.
If it's required, the form won't submit. Not by chat, not in writing.
If you work 10 to 18 in 30-minute slots, 17:14 doesn't exist.
If the maximum is two, a third one doesn't slip through anywhere.
What you can ask
It's not a text box with a different name. A time field knows your opening hours; a date field knows whether it looks forward or back; a phone field knows which country it's from.
A name, a reference. With minimum and maximum length if you need it.
Comments and descriptions, with a word limit and the height you choose.
You can require your own domain, or reject throwaway addresses.
Picker with 178 countries. Set a default country or restrict it.
The https:// is added for you. And you can limit it to one specific site.
With minimum, maximum, decimals and a unit («4 people», «68.5 kg»).
The amount is stored clean; the currency travels separately, as it should.
0 to 100 by default, and you open the range if your case needs it.
Stars or 1 to 10. The assistant asks with the scale in hand.
Future or past only, minimum notice, minimum age, days of the week.
Check-in and check-out in a single field. An end before the start is impossible.
With your hours and your slots: nobody will book you for five in the morning.
Buttons or dropdown. With a free-text «Other» if you allow it.
With a minimum and maximum. At the limit, the rest switch off.
In your own words: «I'll attend» / «I won't attend».
The terms or privacy tick box. Without it, the form can't be sent.
The quote, the receipt, the CV.
A photo of the damage, the space, the document.
You say what you need to know —«bookings for my hair salon, with service, day and time»— and it appears built, with its fields and their types. Then you can edit it and adjust whatever you need.
«Do you have a pet?» → yes → «what size?». Anyone who says no never sees it.
Open to anyone, email only, or just a specific list.
The form carries your brand colour, not ours.

The forms you've built don't count: the ones people answer do. And the assistant is in every plan, including the free one: whoever writes to you decides whether to fill it in by talking or field by field.
